Buttered Irish Potatoes and Leeks



Ingredients:

· 2 cans sliced potatoes
· 1 leek, sliced ¼-inch
· 3 tbsp. light butter
· 1 tbsp. chives
· Coarsely ground salt
· Cracked black pepper

Directions:

Rinse canned potatoes and strain. In a medium sized saucepan, melt butter and sauté leeks for 3 minutes. Add potatoes, chives, salt, and pepper. Stir with a wooden spoon to coat the potatoes entirely. Heat through and serve warm.
