Roasted Potatoes Vinaigrette

Ingredients:

· 4 Yukon Gold Potatoes, cut in half
· 1 yellow onion, cut in quarters
· 2 tbsp. olive oil
· 2 tbsp. balsamic vinegar
· 1 tsp. coarsely ground salt
· 1 tsp. coarsely ground pepper
· 1 tsp. cayenne pepper
· 1 tsp. thyme

Directions:

Preheat oven to 425°F. In a large bowl combine all ingredients, toss to coat potatoes and onions. Place ingredients on a foil covered cookie sheet and bake for 45 minutes.
